Shimla gratifies mainly Indian tourists, and the food is an assortment of piquant Punjabi fare in addition to south Indian dosas and "Chinese" items. Fast food outlets sell hot puri-chhole (deep fried pastry breads with gram curry) and samosas (Indian potato-filled patties) and other snacks, while the dhabas provide cheap Indian fare of dal (lentils), roti (bread) and mixed vegetables. A number of the old bakeries still operating dish up incomparable quality cakes and fresh biscuits.
